Cozy Homemade Winter Soup

A few weeks back on a bitter cold Saturday morning, I trudged down to the Halifax Seaport Farmers’ Market with one thing in mind: a warm and cozy bowl of purée soup. There I spotted my root vegetable of choice, some perfect-looking parsnips from Elmridge Farm. Now that it seems Spring just might be around the corner, I thought I better share with you the fantastic creation we put together that evening, with my favourite root vegetable, and a few other choice ingredients.

Making rich comfort food with seasonal root vegetables, especially soups and stews, is a winter activity that I truly enjoy, and definitely helps to get through those dreary, chilly winter nights.
